Over carbonated or beer line issue??

So here is my dilemma. I am new to using kegs, so these problems maybe from my lack of knowledge, I have tried to read UK on my problems already but havent come to a solid answer. I have brewed 2 brews(1 x mangrove Jack's red ipa, 1 x mangrove Jack's juicy ipa) the first went in the keg roughly 10 days before the other one.
I had built a kegorator from a larder fridge so the first went straight in there while the juicy ipa was finishing. The kegorator temp is sat between 0-2c. The keg was set at 30psi for 24 hours then I dropped it to 12psi and kept the gas connected the beer line is 3/16 cut to 1.5metres into an stainless steel intertap .
After a test of the red ipa after a week the carbination was great about an inch of head and a very tasty pint. Brilliant! As I drank the beer for the next 10days or so it still seemed fine. I have now finished the juicy ipa and use the same method of carbination for that worked fine. What I have now noticed is the first keg(red ipa) is now got nearly half a glass of head and tastes a bit too carbonated for my tastes. I disconnected the gas and dropped the pressure down to 10psi and vented the kegs.The juicy still seems to be ok and without too much carbination.
Why is the red ipa so much different than the juicy ipa? Was the original 12psi too much too long so I have overcarbinated it? Or is my beer line too short? Is so why was it ok for a week/10days before it started foaming.sorry for the long post. Thanks for the advice in advance!
