Hi theres a lot of talk over the freshness of dme/lme my question is how old has it got to be before affecting the flavour, compared with temp differences, sugars, cleanliness etc? I've used yeast thats past it's date by 18 months or so and it fermented fine and gave no funny tastes in my geordie yorkshire bitter. Dme is dry and vacuum sealed so storage in a humid environment might not be good, but other than that I would have thought it should last a good long time.

as long as it doesn't clump, it's all good, within reason of course. i remember a post on here about somebody successfully brewing up some kits from 20 years ago or something

do you mean spray malt or liquid malt?

unopened dry malt should be fine and so should good quality liquid malt if not exposed to the air.

the information that old liquid malt gives the homebrew twang may or may not be correct, I personally just think you get what you pay for.

yeasts problem with age is they die off so no fermentation if all dead
