Hi, I went on a tour of the old dairy brewery last week which is in Tenterden.... Kent. Quite a nice brewery they've got there it's a 30 barrel brewery, tour lasted around an hour with a few samples afterwards. I particularly like there blue top (IPA) and gold top (golden ale) :-P

However I was very surprised :eek: when they said they don't reuse there yeast after each brew, they dump it and use new dried yeast. They said they use 4-5kg of yeast in each brew which would cost a fortune, has anyone else been to a brewery that do this?? They said they do it because there head brewer doesn't have the knowledge on yeast culturing yet :/
 
Last weekend I went on a brewery tour of the Black Sheep brewery in Masham, N. Yorks, and the guide who took us round said that the yeast strain they used had come from the Hardy and Hanson brewery in Nottingham (anyone remember Kimberly Ales?) when Black Sheep was set up in the 1990s. He said that H&H had kept this strain going for many years prior to this and suggested in total the strain had been active for over 100 years!
 
Yeah they said the head brewers going on an nvq course soon to learn about it, but available time could be a reason why they haven't done it sooner....wasn't that many staff there and they use four different yeast strains.
