Hi folks,
I've planned on starting an Oktoberfest beer kit this weekend so it will be ready for mid-September. The kit says it will brew to around 5% ABV but I wanted to brew it slightly stronger as Oktoberfest beers normally are to avoid a wishy-washy taste. The kit says to top the water up to 19.25L so I was thinking if I topped it to 18L it may increase the ABV slightly and improve the flavour. My only concern would be the fact that as well as 3kg LME, the kit contains Hop extract meant for 19.25L and I'm slightly worried about this negatively affecting the finished taste if I brew to only 18L. Has anybody had any similar experiences to this or any other concerns/recommendations I should be aware of? This is only my second kit so I'm still very new to home brewing.
