I fetched my Calypso Blonde ale from the fridge today in order to rack it off into my bottling vessel. Now I'd put the fridge on 'max chill' a few days ago in order to get as much trub to drop out as possible, what I hadn't done was keep an eye on the temperature, afterall, fridges aren't supposed to freeze stuff..

The brew has three inch thick ice shelf on top, and is slush all the way to the bottom of the FV. Now, I don't think it will have hurt the beer, but I'm assuming the yeast is going to be a gonna, or would it be worth trying some in a DME wort once the FV thaws out?

I've got the FV sat on a heat mat for now, hopefully it will thaw out by tomorrow so I can get on with the racking and bottling process :)

The moral of this story being, if you get a ccheap fridge off eBlag don't trust the internal thermostat :D I will be setting up the STC ASAP now.

For a couple of teaspoons of DME I was thinking it would be worth a try. Nice to hacve someone else think I'm in with a chance :)

I've used three different yeasts recently; Nottingham, Safale T33 and Safale T58, I was hoping to culture them and get a year's worth of brews out of 6 quids worth of dried yeast, so hopefully the yeast in this isn't decease, it's the T58 so fingers crossed.
 
You could always have filtred the ice out. The liquid left would be very high in alcohol. Maybe you could have passed it off as whiskey. I included an "e" in whiskey, there, so as not to insult one of Scotland's finest products. Of course it is illegal to concentrate alcohol in this manner :nono:

Nah, not my 'thing', I seriously doubt anything that would come out of a frozen FV would get even close to the taste and aroma of a good single malt.

Once thawed out, bottled and conditioned it will make a very, very, good beer though, the aroma is starting to come back and those calypso hops are still kicking butt, in a couple of months this is going to be one beautiful beer :)
 
No idea how things work with beer yeasts but if its any encouragement I use fresh yeast for breadmaking and keep it ready portioned in the freezer at -18C and it works fine when it thaws.
 
T58 is great yeast. Well behaved and lovely flavour.... just watch out for the sulphur it can chuck out during fermentation, dont go blaming the cat/wife/dog etc!
 
That's what I'd read, so I'm quietly hoping that the colony has survived and will thrive when warmed up and given some more food :)

I've got a couple of brews in mind for next year that the T58 should do work well with :)
