Hi all - i have a coopers mexican cerveza on. I used 500g DME and 700g dextrose, 30g Saaz hop tea and some dry hops sprinkled on top during fermentation (yes i know this was an error), i also short brewed it to 20.5l

OG 1.044 and after only 4 days it is down to 1.007 - 5% ABV, should it have fermented this quickly or has something gone wrong? ie have the dry hops done something they shouldnt have?

Should i fish them out with a sterilised sieve along with some of the fermentation head?

i am a bit worried it might end up at 7% ABV or something daft which will be undrinkable :(
 
That's quick but not surprisingly so. Did you keep an eye on the temperature?

Leave the hops where they are, the less you do to your beer between now and drinking it the better. :thumb: They won't have done anything bad - just remember to add them a bit later next time.

1044 down to 1007 is a nice healthy 4.9%. Sounds about right to me.

I say just leave it alone for at least another week then get it bottled!
 
Temp is a really steady 18-20 degrees, only problem is that it is still bubbling away like mad - so may be more like Leffe than Corona :D

Just had a quick taste - bleeuuurrrggghhh, i am sure it will improve with age though :D
 
All sounds fine. Have you calibrated your hydrometer? Does it read 1.000 in water?

Taste, yes, lagers are awful when they are just fermented... It will get better.

Yes i did calibrate the hydrometer and it was spot on.

I feel a very, very merry xmas on the cards :tongue:

Good point, how can the words beers & undrinkable be in the same sentence?? :nah:
