Hi guys'n'galls

I've just started brewing, and this is my second shot. First is working ok (ginger and medium malt brew on other post) but forgot a few things, like taking the SG. Duh :wha:

So today i was walking the dog in the wasteland behind my house when i realised there was sporadic splattering of bramble bushes spilling their wears right before me. Not one to pass up an opportunity, i started foraging. Much to the dog's delight (who's growling and barking in her sleep beside me) :rofl: as 2 hours later i had 1056 grams of brambles for free. (the dog being delighted about the 2 extra hours running about, not the brambles)

So i decided i would do a bramble brew, which judging by the mass supply on my doorstep, will be a running theme in the house (if it works)

Enough blab, here's what i've done.

Water 7 L
Sugar 2kg
Brambles 1050g
Ginger 400g (grated)
Lemons 3 (sliced)
Honey 340g
Yeast 2tsp (1 per 5L DJ)

Place 4 litres of boiled water in pot and add sugar. Stir over lowest heat to dissolve.
Once dissolved, turn up to rolling boil and add brambles, ginger, lemons. Place on lid and boil until 70-80% of brambles break down.
Put honey in jug of boiling water to liquefy and add to pot, stirring at the same time and for 2-3 minutes after so no honey settles and burns.
Strain and add 1.5L to demijohn and top up with 3L of cold water
Take hydrometer reading
Add 1tsp yeast to each demijohn and mix

Temp was 32C when tested SG and reading was 1.078. Hydrometer calibrated to 20C so i make the actual SG 1081.

If i can get the OG down to 1.006 (i believe this is the vest for avoiding bottles exploding) i should have ABV of 10.1%

Demijohns are bubbling away gently and were a few minutes after adding the yeast.

Will see what happens in a week or 2. Fingers crossed

That sounds delicious, and different too! You're lcuky to have so many blackberries right beside you, I've never managed to find enough to make anything with them. I hope it works out well for you :)
 
Thanks Gayle, it smells and looks amazing and the small glass left over tasted great mixed with vodka and lemonade so i have high hope for it :D

Can't believe you can't find good supply of brambles in NI. There's loads around the back roads near Kilrea if you're near that neck of the woods.

Will update when it's finished bubbling.
