Novice; australia pale ale coopers non-boil

Following round disk coopers instructions .., I use tap water

But after 4 days in fv I get 3% volume, and a slight sour whiff

I must be getting contamination from non boiled water

Btw fv temp 21c
 
Most people use plain tap water for their brews, without boiling it. It's the one thing you can pretty much rely on to be free of nasties.

Best thing would be to leave it alone for another 10 days and then have a taste. Chances are it'll be fine. If it tastes sour/off, chuck it and have another go, being extra-scrupulous about sanitising all your gear this time. Give everything a really good wash and soak in sterilizer, including the tin opener, the tin itself, even the scissors you use to open the yeast packet.
