Vaults in Norwich hold more than 500 species of organism that are vital to the brewing industry.
The city is home to the National Collection of Yeast Cultures - a repository of different strains from around the world and where many breweries store their yeast as an insurance policy against disaster.
Martin Warren, from Poppyland Brewery in Cromer, is to use a yeast not used for commercial brewing since 1958.
Inside Out looks at bid to tempt the taste buds of the present with a yeast from the past.
