I'm getting round to making a Woodfordes Nog kit and I see from here that I shouldn't be surprised if it gets stuck. In fact I get the general impression that with this kit and also with the two Muntons Gold kits I've got (Porter and OEB) , I might as well bung in another sachet of yeast from the start.

So I trotted off to the local Wilko intent upon the purchase of three sachets of their yeast, only to find that they don't stock it, which leads me to the questions ...

Can somebody please recommend a yeast I can get off Ebay which will do the business with all three of these kits?

And if I double up on yeast from the start, do I double my chances of having to do some mopping up when it starts fermenting?

I found crossmyloof yeasts to be ultra cheap but also reliable. Various opinions on them but for the moment they'll do for me. I have brewed lots with their American ale and traditional ale and all have been fine. They do a great range of hops too..

Just grow the population of yeast you have ;)

Not a big job simply use preboiled -chilled water to make a circa 1.040 solutrion with dme or sugar (make 100g of sugar upto 1l ) and use a sanitised 2-3l pet bottle to mix and shake air into the solution prior to pitching. and over the next 24 hours regularly squeeze out the co2 heavy air from the bottle and suck in new o2 rich air before sealing and shaking and unslealing the lid.. keep the solution o2 rich and warm (25-30c) and the yeast will concentrate on population growth.. after 12-24 hours the yeast will have digested most of the sugars (check with a hydrometer..) and you can let the yeast settle out as you decant off the spent liquor before pitching the now vastly increased yeast population into your beer 'add some beer to swill it out perhaps'..

you can invest in glass flasks stirplates etc but all you need is a big pop bottle and the time to add 02 and shake it in every hour or so
