I'm going to try to make sparkling wine,my question is once brewed, what can I flavour it with that has no sulphites that stop the yeast?

There's an amazing natural wine maker in portugal that uses dried chestnut flowers as a natural sulphite alternative for stabilizing wine. I haven't got the info on dosing rate yet. But if I do I'll send you a message.

Tbh honest I don't understand the question..

Are you after a flavour?

Are not wanting to NOT use sulphite?

Or did sulphite flavour a wine that you don't want to happen again?

I was after making a wine that's flavoured but still has fizz, poor man's prosseco if that sounds right
