Newbie, transfer kit from brewing tub to barrel

Stupid question but when using the syphon pipe to transfer the brew, should I aim to avoid getting the gunk at the bottom or should I be aiming to get as much as possible moved across. Thanks

Yes, you should aim to transfer as much of the liquid as you can while leaving the gunk behind. A rigid plastic racking cane with an upturned cup on the bottom end makes the job much easier, and they are pretty cheap.
 
you get quite good at avoiding it with a little careful tipping. I'm usually happy to add finings in the bucket and then syphon off clear beer.

Some people add a tablespoon of the stuff at the bottom to their kegs, it's meant to be good for the yeast! I'm dubious....
