Hi I am new to brewing. So far I have made a few gallons of wine and cider.
I am planning on making another gallon of cider this week.
I will be using 4 litres of concentrated apple juice from lidl
800 mg of sugar
1 teaspoon of ale yeast
1 teaspoon of yeast nutrient
1 teaspoon of pectolase
1 teaspoon of citric acid
1 teaspoon of glycerol
What do I need to do to carbonate it guys.

Thank You
Stevie

800g of sugar is the ammount i us in wine making, I don't make cider but was under the impression they don't add any sugar.

Hi and thank you for the reply. Yeah I am making it strong and hoping for high alcohol content. The lady in my local home brew shop advised me to bottle it before fermentation has finished and then add carbonation drops or sugar to each bottle for carbonation.
Either use flip top bottles or plastic bottles as well. Ikea bottles are a no no she said.

Were you aiming for 13% as that is where its roughly going to end up, you may not want to drink it by the pint!

.

You won't get to 13% using ale yeast, it will die around 7-8%. You're gonna need wine yeast.

That's a way to do it, but also a bit risky because you may underestimate the sugar content. I'd ferment it out and then do the carbonation routine.

I've only made a couple of turbo ciders, and not with high ABVs, but they've all carbonated.

Let it ferment out, i.e. air lock activity slowed to nothing or maybe a bubble every few minutes, bottle with either two carbonation drops or a heaped tea spoonful of sugar per bottle.

Thanks for the advice, i will use wine yeast. I have a good bit of super wine yeast left. I was going to use the ale yeast as someone told me it gives it a better taste.

This forum is great for advice.
