I've been trying to refine my lowish alc brews of late, so thought the time was now to try a stout then see if I can lower the alc a little.
It's not that I don't like higher strength brews, it just I like to drink a lot and want to be able to stand :D

brew length 25
3.5 kg pale malt [73.1%]
0.5 kg flakes barley [10.4%]
0.35 kg chocolate malt [7.3%]
0.44 kg roast barley [9.2%]

northern brewer 35g for 90mins
northern brewer 40g for 15mins
northern brewer 65g at 80degC

aiming for 1045 and FG of 1011 so 4.6% and 39IBU

mash in 11.2 litre for 72mins at 68degC
sparge with 21.3 litre
top up to 28 litre in boiler then boil for 90min

for yeast, well I'll just use the yeast cake from the brew under the stair.

hopefully this will give a sweetish malty stout. :hmm: :drink:

don't know how you lot can start early on a weekend. :wha: My mash is only just done so better go and run it off.

Easy i have a 2 year old who is always up before the crows!
He is guaranteed to be jumping on my head in the bed by 5.30 every morning "get up daddy get up" what ever day of the week it is.

Have you done an all northern brewer brew before? I find it needs a bit of an extended rest as it is a bit harsh when young.

a 2 year old. been there, done that, now get a long lie every weekend. :D

Brew day went just fine. got 23 not 25 litre and the OG came out at 1049 which computes to the 23 not 25. Could have just topped up but, well 23 will be fine. :thumb:

run off still a bit slow, any suggestions why. I'm thinking it is the bag of pale malt I'm using. Never had this hastle before. It does seem a little more floury. :?

27 litre in the boiler.

Time to cool it down to 80° for last hops, the take an hour out to go to the school; parent council duties :roll:

Yeast in and I'm happy.

So got an EverySecond batch to bottle tomorrow,
Just put a Longpool batch through to garage to settle.
And here is a PotStout started.
Should I brew tomorrow? :pray: :wha:
 
That's a similar brew to my brewday yesterday, though I used up the last of my torrified wheat instead of flaked barley.

Looks blacker than the Mrs heart :thumb:
 
Im still new to this AG brewing. I notice your not worried about getting air into the wort pre boil. I thought hot side airation was a bad thing am I misstaken????.
 
never thought, but if it's boiled would it make any difference?

I spent lots of time reading up on HSA (Hot Side Aeration) and concluded that as home brewers we need not worry.

Lots of stuff on the internet about this, but my conlcusion is...do what you can to avoid it, but dont lose sleep if you cant.

Thats fair enough. I can carry on useing the pipe I use that alows air in then.

Thats a nice dark looking Stout. After my attempt at the Forum Brew Xmass special an Imperial Stout is next on my list.

that was an interesting point, and that is why I post.
Does the boil not sort out the aeration? Which is why we take so much effort to add O2 when it cools. I do try to avoid aeration after the boil until it cools.

Today's brew is growing already. :D
