Hello, at the time of making I had quite a few questions and concerns. I did have to ditch some juice as it wasn't fermenting for some reason but as my sig shows I now have 12 gallons of still cider from our own apples and it has basically turned out ok. I thought I would let the forum know. Thanks again for the help.

I fermented it right out and backsweetened. Before fermentation I also added a lot of sugar to make it strong. It has a slightly sharper, more tart taste than Woodpecker or Strongbow etc. but it is ok.

Yes! I have Wilko's wine constantly on the go, and when the plums, apples and sloes come through I will make some more cider, plum wine and sloe gin. The plum wine didn't ferment for some reason last season so fingers crossed. You never know I might try some apple wine or something I have a few more unusual recipes written down.

I have planted some fruit trees too so a few years down the line the volume will increase.
