Thought it was about time I got my Christmas beer on the go. Maybe a little late, but then I don't go in for the practice of aging for months on end.

Had developed an Imperial stout recipe, but then looked at the ingredients I had in and decided to do a quad type thing on the hoof inspired by Pennine's spring stout.

19L (I hope!)

5.5kg Maris otter
0.5kg caramunich
0.2kg carafa 2
0.5kg Abbey
0..7kg brown sugar

25g Magnum @60
30g Chinook @10
50g Chinook @0

I'm co-pitching safale T-58 and WY3787

Haven't calculated what numbers I'm aiming for, was all very last minute. Hoping for around 10%. Not like me to throw something together like that so fingers crossed!
 
I think 10 litres is a sensible size...it can be difficult getting through a full keg of something unusual.
An suggestions as to what I could brew? I'm not too keen on Belgian beer bar a SAISON...I like a stout though.
 
No, sorry. I just use the recipe builder on this site and write the recipe down in a brew journal. Don't worry if it's a faff 👍
No dead easy
On this occasion I have tried some floor malted MO - but any MO will do

Also it's a 10L - but you could amend if needed

I've just got the brewing books out and in The Big Book of Homebrewing one recipe pops out at me...Great Divide Brewing Company Yeti Imperial Stout.
I got all the malts in stock,hops are chinook and centennial. Its asking for Wyeast 1056 American ale or White Labs WLP001 california ale...I use dry so any suggestions for the yeast please?
Ha! A quick Google....US05...I'll use MJ West Coast....now,do I pitch 2 or do I need a starter (which I've never done).

They're all descended from the original Sierra Nevada 'chico' strain (or so I'm led to believe). I've a particular love for Bry-97 at the minute for no other reason than it was the yeast I used in my first iSpindle brew. Watching it go off like a rocket was really satisfying, and I've had many happy brews with it since.
I'd pitch 2 sachets and not bother with the starter. Or better still, brew a short and shoddy pale ale and pitch your Imperial Stout on to the yeast cake.
 
Yeah, I agree with @Alastair70 , I'd be inclined to pitch 2 sachets. Incidentally, I'd be happy to send you a bottle of this quad if it turns out any good to try to change your perspective on Belgian beer?
I did have Belgian off Hazelwood Brewery and I really liked it...but other bought stuff I've been a bit indifferent to..
I would love to try one of your beers! Thank you!

Well the beer is fermenting nicely, and smells beautiful (even if it does look like a muddy puddle 😁)

I didn't put the full amount of sugar in the 'recipe' in, went with 500g because..... reasons 😂. Got 18L at around 1.085. I expect it to finish quite low given a lowish mash temp, bit o sugar and a big yeast pitch..... fingers crossed!
