Here's the next brews Im planning (dont know which to do first but will be doing soon-ish (next year))

First one is a steam beer!
Ingredients
4000.00 gm Pale Malt, Maris Otter
225.00 gm Munich Malt
115.00 gm Light Crystal Malt
115.00 gm Crystal Malt
25.00 gm Northern Brewer 10.50 % (60 min)
15.00 gm Northern Brewer 10.50 % (30 min)
20.00 gm Hallertauer 2.10 % (Dry Hop 7 days)
1.00 items ProtoflocTablet (Boil 15.0 min)
1 Pkgs SafLager West European Lager (DCL Yeast #S-23)
Beer Profile
Est Original Gravity: 1.055 SG
Est Final Gravity: 1.016 SG
Estimated Alcohol by Vol: 5.05 %
Bitterness: 42.4 IBU

American Pale Ale next:
This as a base:
3750.00 gm Pale Malt, Maris Otter
400.00 gm Munich Malt
250.00 gm Wheat Malt
100.00 gm Caramel/Crystal Malt - 30L (light)

Est Final Gravity: 1.014
Estimated Alcohol by Vol: 5.13 %
Est Color: 11.8 EBC

Hops :hmm: thinking of spliting the wort into to and doing two boils one with Nelson Sauvin, the second selected from the following:Amarillo, Beata, Bobek, Challenger, East Kent Goldings, Fuggles, Glacier, Hallertauer, Magnum, Northern Brewer, Pilgrim, Progress, Saaz, Simcoe or Stryian Goldings (basically a choice from the hops I have in the freezer!)

and last but not least a wheat:

1500.00 gm Wheat Malt, Bel (3.0 EBC)
15.00 gm Amarillo Gold [9.50 %] (60 min)
10.00 gm Amarillo Gold [9.50 %] (15 min)
20.00 gm Amarillo Gold [9.50 %] (30 min) (Aroma Hop-Steep)
1.00 items ProtoflocTablet (Boil 15.0 min)
3.00 gm Coriander Seed (Boil 5.0 min)
1 Pkgs Munich (Danstar)

I'd get some orange in that wheat. Gives it a nice bit of 'something extra'. Either dried bitter orange peal or fresh for the last 10 mins. Still got 2 litres of my last wit and will be opening it on christmas day. :thumb:

I do have some Curacao, but was thinking that the very citrusy Amarillo's would give the flavour!
