HI all
Brewing my mead tonight and a porter next week but I'm planning a nice Mild for the week after that (I have a new 50 ltr boiler in the manufacturing stage at the moment). Never made a mild before but I hear it's a good test of one's skills :D

Whats your experience of difficult brews, is there anything that you've yet to nail and get it to a stage you're happy with?

I think that pale, low gravity beers are the hardest to make consistently good.....say to around 1040.
There is just nowhere to hide wuth these......no big alcohol hit or dark/roast malt flavours to mask whatever may have gone wrong.
