Mossic and simcoe

I have made about 3 or 4 brews using these 2 hops thinking there a good match
But each one has turned not good I'll drink it but not what I expected
I thought it was infection at first but tried again still not good this time triple cleaned and sanitized and yet again not a good beer is it pure bad luck or is it just a bad combo on each brew day I done another batch for back up and its grand

I haven't mad a brew using both together but inspired by Ascots brewery's single hop series I made a single hop Mosaic brew as an American Pale Ale and it was one of the best beers I have made.

Ditch the Simcoe? :)

May be just not to your taste but a better match is Mosaic and Citra try that and see how you go.
Ps Simcoe will be overpowered by the Mosaic and it has been know to give a cat pee taste I have read I think but I have never had it. When I have used it its always been ok to me but as I said some people are more receptive to different hop tastes and not in a good way sometimes

Yep just a bad combo I think I'm just stubborn and thought they would work had each hop in other brews and they were nice
On the cat pee I agree with Clint how ???? U got another hobby maybe lol

Simcoe and Centennial may go better, but TBH, my "fails" in the last few years have all been hoppy US beers and most of these will have had Simcoe in them.

Going to package my NEIPA with Simcoe / Mosaic this weekend in roughly 75 / 25 ratio.

Will let you know how it turns out. Disclaimer: I'm a fan of that catty dank flavours...

Boddingtons was a NW England cult beer as late as the early 1980's. If I recall, the story was that the old Strangeways Brewery in Manchester used Copper lined Fermenter(s) and over the years, the distinctive, high attenuating yeast evolved into this micro environment. When the Brewery sold out, production was moved to a "modern unit", with stainless kit and the yeast "upped and died". Thereafter it was never the same again, hence @Clint & Co (no offence, here, mate) deride the modern version which is similar in name only to the very distinctive, dry, bitter and pale beer I used to enjoy in Glossop in places like the Drovers (my local), the Station and the Grapes ( Landlady - Gladys Sidebottom, may she rest in peace).

I've pretty much given up using American hops altogether apart from Cascade. Unfortunately I've still got quite a stock of Citra and Idaho 7 and I'll have to find something to do with them, but as for Simcoe and Chinook, they're getting chucked. I get much nicer, fresher flavours from NZ hops without the "dankness from the crypt" or "unwashed armpit" flavours.
Cascade, on the other hand, is a lovely hop.

Talking to some of the lads down under, I've come across a beer called Pirate Life Pale Ale hopped with Mosaic and Cascade I've knocked up a small batch to use up some of my Mosaic and had a taster last night before bottlng today. It's very drinkable and the combination seems to work well. If you google a recipe, don't confuse it with their IPA, which includes Simcoe.

I am starting to go off Simcoe too and I think there is something in what AA says about NZ new world hops which do seem to give flavour with less off flavours as some of the US hops do although there are some I will still go with.

I brewed a single hop beer with Mosaic earlier in the year. It is the only beer I have ever thrown away. Can't really describe the taste but it was very unpleasant.

We invited the head brewer of a big Dutch craft brewery (known for their hoppy beers). He shared that Cascade worked well with Citra / Mosaic. I personally use Centennial with Mosaic most often, but Centennial is often described as super Cascade.

I'm not a big fan of some of the newer variants like Idaho 7 or Sabro. They take this diesel-like quality up to an unpleasant level.

My house pale is citra,centennial, cascade. It's still developing, I'll drop the ibu slightly next time and I think add some oats.

Citra does make a great pale I made a few with ekg and citra lovely beer
