Mosaic ale

Hi there,

My other brew at the planning stage (in addition to the black IPA I just asked about) is a Mosaic pale ale. I have never used Vienna malt and heard that it combines well with Mosaic so thought this was a time to try it.

Recipe so far is:
predicted wort 20l
predicted og 1.052
predicted abv 5.7%

3.2kg pale ale malt
600g vienna
200g carapils

60 min boil

20g Mosaic @60
20g Mosaic @15
30g Mosaic @5
30g Mosaic dry hop (7 days)

Yeast - probably US-05 or maybe M-44.

Any tips? I want to maximise the flavour but I only have 100g of Mosaic pellets so if I need to reduce the batch size a bit I am open to that.
 
I have Sladek or Saaz hops. I could buy some more but I seem to be constantly doing "spring cleaning" brews. The Mosaic is a fresh batch, maybe I should have bought two packets!
I guess I could bitter with the Sladek?
 
It'll be lush! Mosaic is my single favourite hop, and a tiny amount of a Mosaic SMaSH I made once the best beer I've ever had...

IMHO it beats the pants off Citra, Amarillo etc when it comes to flavour and/or aroma!
