Sorry I have a few more questions for you.......

So when you rack the beer into the kegs without the tap do you close it with the cap with integral PRV or the cap/bung supplied with the keg?

I imagine the keg needs a PRV when conditioning for obvious reasons?

And when it comes to serving via the Party Star tap, the youtube video from 11:00 minutes shows it being inserted into the keg directly through the bung in the top without removing it first and so not losing the natural carbonation attained during conditioning. Have I got this right?

Yes, I’ve pretty much got all that kit.

If it’s beer, I just use the cap/bung supplied because I’m pretty confident I know what’s going to happen with my forced carbonation.

Not if it’s beer (see above). If it’s cider or ginger beer then yes as I’m a bit more “artisan” Hugh Fearnley W when it comes to making them and I’ve no idea what’s going to happen and I can’t be bothered babysitting them. I tend to use the kegs with the taps and a PRV with those brews!

You can’t use the PRV’s with the Party Star so that’s why I use the kegs with the taps when I use them. Eventually when the natural carb starts to reduce in the cider or ginger beer I’ll pop out the PRV and stick the Party Star in the top and use that.
For beer, the Party Star goes straight through the air vent style valves. The top Of the valve comes off and you push the bottom inside the keg.
 
...also, if you’re using the rubber bung style, you just push the Party Star through them as the middle bit pushes inside the keg.
