milk stout

Hi all,found my lactose sugar(arm & a leg here in france), my question is what hops can i substitute for saaz dont have any from hop substitution chart, i have fuggles,ekg,bram,x, challenger,northern brewer target,& bobek.also would i up all the grain by 20% & reduce hops as in other dave lines recipes.this is for a castle milk stout. : johnluc

I'm not sure that Saaz would be my first choice in a milk stout myself - the light earthiness would probably be overwhelmed by the malt. Fuggles or Goldings would be my recommendation from your list.
