Mild/bitter dark honey beer

Picked up a brupaks boiler yesterday so thought I'd give it a go.

Here's the recipe I concocted today:-
4 kg pale male
700g crystal
500g wheat malt
40g challenger at 90 mins 7.2%AA
20g goldings at 15 mins 5.34AA
1tbsp Irish moss

Smells gorgeous, and what's more I've got an experimental yeast to try, had been mixed up yesterday night, think its coming on in the bottle now.

Mashed 15 ltrs with all the grain at 66-67 deg for 90 mins,
Sparked out 30ltrs of sticky sweet wort. Boiled it down to 25 ltrs and is now sitting there waiting for the yeast:)

Got to try out my new sparger+ boiler so I'm chuffed!:)
 
Well it looks like its fermented out, so gonna rack it tomorrow and add the honey, probably about 450g. Leave it a week or two, then it'll probably be bottled:)
 
Nice one. I did a honey brew end of last year and found that the 400g or so of honey I added after primary fermentation was not enough, i.e. I can't taste it in the finished brew. You might consider upping the qty... I'm going for 900g when I next brew with honey.

Either way, let us know how it turns out.
 
Well the beer turned out nice. Very special taste to it so not many would choose it…very very heavy! 5.7%has a black treacle property to it!

Quite nice but not a weekday beer!
