A while back, I bought a 25kg sack of milling wheat for bread making. Made some progress using it up, but have about ten or fifteen pounds of it left. I fancy trying a wheat beer, and have discovered that you don't even need to malt the wheat if you keep the proportion below about fifty percent, since the barley has enough enzymatic power to convert the wheat starch.

I found an article on how to malt the wheat, which looks like fun in itself. Article link at the bottom.

Anyway, I'm thinking for my next brew, I might have a go with some raw wheat and MO - maybe about a third, but I'll need to do more research on that. I have a mill, so breaking the grains will be no problem.

One thing I will be a bit wary of is clogging up the hop filter on the boiler, because wheat is more gluggy than barley by all accounts. I find the filter tends to clog up anyway and I have had to stroke the damned thing with a long spoon to get the boiler to drain.

Anyhow - would appreciate any info about your experiences with wheat - raw - malted and on malting it at home if anyone has done it before.
