Ok, simple question. I have heard that the maturing period for beer is about 1 week for every point of OG (1.040 = 4 weeks). What about wheat beer? I heard too that it is to be drunk young, so my recent brew of OG 1.048 would take 5 weeks? Is 2 weeks enough?

I have always drunk my wheat beers young however when I bottled it took longer to condition because I was aiming for a higher volume of CO2.

So taste it after a fortnight - if it tastes good then its open season. If you think it needs a bit longer then jeave it a bit longer.
