Maturing in the cornie - the 2nd week blues?

I've got a new theory....I am very much with Wez in that if a beer is good enough then its old enough (they said the same thing about Owen and Rooney - they were great beers!). Anyway I have noticed that on a few occasions I have made beer and it is very good as soon as it is kegged and after the usual maturation period it is also very good. However, there is a spell, around a week to 10 days in, when the beer takes a dip and doesn't taste so good.

Has anyone else noticed the same? :wha:

and....does it really last that long :shock:

Perhaps the bottle of rioja I consumed prior to tasting last night compromised my taste buds. :oops: :lol:
 
Ive noticed that to but I thought it was me imagining it would'nt say it dosen't taste to good but has a slight off flavour but next time I have a drink its spot on :wha:
 
Yep, I get the same with every brew.

I always think I've messed it up. Two weeks later I'm declaring that I've done one of the best beers ever ;)
