I am drinking a brew I did atm which has only been in cornie for 3 days which already tastes very nice. It has a lot of crystal malts and is dark and sweet but I also used 100g of high alpha american hops late, not dry and no bittering additions but only bittering to 40 ibu from first wort and 15min additions (more hops went in latter too). It tastes nice but mainly malty. the hops are noticable but surprisingly mild considering.
The question is, is this the malts that are masking the hops flavour or could I have got the same result using less hops. Any thoughts? I am still playing around with large late hops but would a bittering addition in the case of a malty beer actually make the hop flavour more pronounced? Just wondering if any one has any thoughts around this matter?
