In Graham Wheeler's books, he often refers to Maltose Syrup, and then rather vaguely mentions that it is derived from corn sugar. I've never seen it for sale as maltose syrup?
What's a good substitute for this stuff, weight for weight, and bearing in mind that spray malt, glucose etc are powders and therefore weigh less and are presumably more concentrated than a syrup, which is a sticky liquid?
