A pack of WLP 565 Saison II came in the post for me today and I need to make a 2 litre starter for it. I'm pitching it into a 25L 1.076 wort.

Should I pitch the yeast straight into 2 litres of starter or should I pitch into 1 litre first, then once that's going pour another litre in?

TIA

Just straight into 2L. If you dont have a stir plate. Put the starter +yeast in a 5L water bottle and shake the hell out of it x4 times per day for about 2 days (or until your not getting loads of C02 off gassing when you open the lid after shaking)

If you dont have two days to ferment the starter out you can pitch at 'High Krausen'. This is at about 12-24 hours after starting the starter. In many ways this is better because the yeast is at it's most healthiest and it will start of sooner (less lag time) which is always good.
You wont however be able to crash the yeast and pour off the spent starter wort which you can do if you let it ferment out completely as you'll be pitching everything if you pitch at high krausen. No problem pitching everything though (I usually do this as I cant be bothered to crash the starter) other than perhaps diluting the main body of your wort (the OG) but that depends on you brewlength of course
