3 weeks ago i found a recipe for Lychee wine and thought i would put on a batch, here's what i did.

6 tins of Lychee's (chopped) and put in two muslin bags.
4 litres white grape juice
3 litres apple juice
2kg sugar
4 tsp nutrient
4 tsp tartaric acid
1 1/2 tsp citric acid
1/8 tsp tannin
4 tsp pectolase

As an experiment i added 3 tsp of Bentonite to see how well the wine would clear.

Lalvin k1-1116 yeast and i topped up to 16 litres (sg.1080)

It fermented out to 0994 after two weeks and i racked and stabilised a week ago. The wine is very nearly clear, so i'm very pleased with the addition of Bentonite at the start of fermentation.
Has anyone else made of batch of this? I know i'm looking forward to tasting this wine when its finished.
 
Eish. lychees are really popular where I come from but they are one fruit I just never got a taste for. Sounds interesting though.
