Just bottled 40 pints of pils, which was a Coopers kit, tweaked by the addition of a little fresh chilli in the fv. I had decided to experiment with low alcohol, so I heated about 10 pints and simmered (never coming to the boil or approaching it) at 80-85C until all the alcohol smell and taste had gone (probably about an hour in all).

When cooled down I added a little (20%) full strength wort into 16 of the bottles mixed with the alcohol free (heated) wort: 16 bottles half and half and the remainder at full strength. I will be interested to see the process has worked and whether the yeast suspended in the 20% full strength wort is enough to carbonate the low alc batch.

I will give it at least 14 days in the bottle.
 
I've just dumped a load of Barley Wine that started off as an "experiment" in 2016 so I wish you luck!

Hopefully I will remember they key written on the lids - L=Low M=medium and FS =full strength when I come to drink them. Although now I come to think about it, twist them around an L becomes V and M becomes W and my Ss look more live 5s!
 
Well, it has way pretty well. Lots of taste, still a little alcohol, but much better than most low alc beers.
