I took delivery of Saison AG kit from Brew UK on Monday. Unfortunately I have been away and the missus failed to see the big sticker on the top of the box saying that the liquid yeast therein needed to be refrigerated so it only found its way to the fridge on Wednesday. As it was delivered on a Monday I guess there is alos a chance the package spent the weekend in a depot somewhere.

Anyway I have never used liquid yeast before- just how important is it to keep it cold? Will it have survived this little episode do you think?

Cheers

I would say it had survived but not being in the fridge/cold would have reduced its viability somewhat. So if it was me I would make a 2L starter (2L starter is quite big for 23L, normal is about 1.5L, but personally I'd rather make sure) from the yeast and go from there .Id always make a starter from liquid yeast anyway as you dont know how its been handled prior to getting to you. If the OG of the kit is bigish I'd also consider a second step up
