just discovered the wonderfull world of belgian beers :lol:

doing lots of tastings from what i can get from the supermarkets and will be ordering some special stuff online with names like rochefort 10 and chimay blue :D

the inital sweetness was a suprise but the hop balance and strength was superb, how do they brew them and retain the sweetness and does anyone have any recipes for this or other belgium brews ( not stella though :lol: )

Hiya rick, you need to spend a tenner on "brew like a monk", it'll tell you all you need to know about brewing belgian ales.
As for the Leffe, I hate to tell you but it's brewed at the STELLA ARTOIS brewery :oops:
I guess Leffe is the first Belgian most people try (was for me anyway), but there are a lot better beers out there! Try and find a St Bernardus 6 and compare that to the Leffe...

You could try something along these lines for a dubbel (from the book I mentioned above):
60% Pilsener/pale
10% Munich
5% Crystal + Roasted
5% Special B
10% Sugar

Go for it Rick .. love to know how a leffe comes out. I'm on a self-imposed ban however. I drank 15 halves in a pub one night.

:lol: Never say never Tony ;)

Will need to do a couple of brews so I can order some special / different grains so the spare room isn`t to full of sacks (keep her happy :? ) Put a recipe together and make some sugar candy stuff ( silicone moulds accquired already ;) )
then will be brewing some sweet, fruity, strong ales :cool:
