Havign a go at my first lager brew and using the recipe for Holsten Pils out of Dave Lines "Brewing Beers like those you buy" purely as this looked straight forward.

Book advises to leave until gravity falls to 1012 from an OG of 1046 (my OG was 1040 and is at 1014 after 12 days), then leave on sediment for 30 days, bottle and leave for 30 days.

Is this a necessary period of time? Understand leaving once bottled, but leaving on the sediment not sure what benefit is. Was proposing to leave another week or so, then filter off into another fermenting bucket and leave this for a week/10 days to allow some of the "muck" to drop out.

Any advice?
 
You don't have to but, the longer you leave it the clearer it will be.
I would leave it 10 days on the lees, then rack it off & leave it another week or so before bottling :thumb:
