I want to sneak in a couple of quick brews between now and Christmas...I was thinking of doing a Pseudo lager but in my search for inspiration found the style guidelines for Kellerbier, which looks like it would be an ideal vehicle for Lutra or Ubbe Kveik.
I've come up with the following recipe with a bit of research and I'm open to suggestions.
Kveik Pale Kellerbier
Batch Size: 19L
OG 1.049
FG 1.008
EBC: 9
IBU: 28.7
BU:GU 0.59
ABV 5.28
Grain bill
2.5KG Lager Malt
1KG Vienna Malt
500g Maris Otter
150g Carahell
Hop Additions
30g Tetnang @ 60 mins
15g Tetnang @ 10 mins
15g Hersbrucker @ 10 mins
10g Hersbrucker @ Flameout
Other Additions
1/2 Protofloc @ 10 mins
1/2 tsp Yeast Nutrient @ Flameout

I'm planning to use Ashbeck out of the bottle and mash in at 52°c for 20 mins followed by a 40 minute rest at 65°c and a final mash out at 74c°
Fermentation will be at 33°c for 3-4 days with a cold crash at 2.5°c for 48 hours or so.
Any advice or observations are welcome.
