Hi all

I have a Kenridge 5 gallon Barolo kit on the go. I am at the 'de-gassing stage' which consists of adding a sachet of Potassium Metabisulphate and stirring regularly for 2 days, according to the instructions. How long does this REALLY take? It's only the third day so I'm not worried yet, just want to get an idea. There's still plenty of CO2 in there.

I don't know, as I always use the ‘pick it up and shake it’ approach. That only works with closed fermenters ;)

A whizzing stick or paint stirrer mounted in an electric drill will do the job quicker, but don't worry about it too much.
 
I use the 'paint stirrer mounted in an electric drill' method, really quick and simple, as long as it is clean ;) It then takes me about 2 mins on the hamer setting to get the majority of the gas out. Seems to make it clear faster and better too.
 
Ah, thanks guys. So, it would seem that very vigorous stirring or shaking is the order of the day. I wasn't sure how vigorous to be, as the instructions only said to stir for a minute, 6 to 8 times over 2 days. I started by stirring the first 2 days but got fed up of re-sterilising and cleaning my stirrer, so I've been shaking since.

The funny thing is, I've made a few kits, albeit a few years back now, and I don't remember having to do this before. The instructions say that the gas must be gone before adding the fining, is this essential?

No, some people seem to be quite obsessive about de-gassing, others only make a token attempt at it, and plenty more never bother at all.

I fall into the middle category, mine gets a few good shakings over no more than a half hour period.
