Hey hey,
not been brewing for long... made a few woodford kit ales but just fermenting a ginger ale
recipes:
1.3kg ginger
spices - cinnamon, cloves, allspice berries
3 lemons
1kg brewing sugar
1kg muscovado sugar
7g sachet champagne yeast (soaked for 10 mins b4 pitching)
topped up to 16 litres

its had about a week now at around 18 degrees c

bit worried bout the smell its given off though.... smells like sulphur...!
Smelt great for a couple days but now it aint so pleasant...
was worried i kept looking too much.. (once a day)
the fermenting bucket i have has a snap on lid an i was worried it would blow off with all the pressure!
its really going for it atm!
 
welcome to the forum SB.
Ive never done ginger beer so cant really help(im sure someone who can will be along soon)but it sounds ok. If its still fermenting it should be fine, dont worry too much about smells some can be foul. Let it finish then bottle or keg it and leave it for a couple of weeks then see what youve ended up with. :thumb:
 
Welcome on board, I too haven't yet done a Ginger Beer, but have done a Turbo Cider with ginger and it was much the better ofr leaving it be for a while, let us know how it goes...
 
I've done a couple of ginger beers now, and with 2kg of sugar, and only 16 litres, it'll be rocket fuel! :cheers:

Dont worry about the smell, but if you like it really nice and hot think about adding some ground ginger...
