Just a thought, really. My current method is to boil up 2 gallons of water, chuck all of my extracts/hops etc in there and follow the schedule, then dump it in my FV, top up with water and allow it to cool (usually for 6 hours or so) under airlock. Is this degrading the quality of my brew in any way?

Also leaving it to cool under an air lock is a waste of time. As it cools all it will do is suck the contents of the airlock into the FV along with surrounding air and the like.
