Is my beer 'comprimised'?

hi,

My St Peter IPA is about 6 or 7 weeks old and is clearing down ok, yet when i've had the odd sample it has a bit of a sharp, dry aftertaste, and probably doesnt taste as good as it should. Don't get me wrong i've still managed to get through a few 1litre bottles but i've not enjoyed it as much as I was hoping.

Is it because it is still a bit too young, or is it possible that the brew has some sort of infection?

Unlikely to be an infection as an infection would make it totally undrinkable.

I have sometimes found that over-priming with sugar can lead to a greater carbonation and therefore sometimes a sharp flavour.

Conditioning: St Peters Ruby red ale
Conditioning: Coopers Lager
Drinking: Coopers Australian Pale Ale (and very nice it has turned out)

Best bet get another brew on and see if it turns out the same, I have found that age has always helped to improve anything I have done...
 
well I had a little go on the bottle I had in the fridge last night, and it actually tasted a bit better. I know it sounds a little daft but I shook the bottle ever so slightly from side to side before I opened it. I tried not to disturb the sediment but it deffo seemed to taste a bit better than last time :drink:

Maybe it was over carbonated, to be honest it was my first 'bottling' attempt
 
Trying pouring the next one into a bigger jug first - not down the side or anything, just direct pour to the bottom so it foams up as much as possible - let the foam subside and then pour into your glass - this will take a lot of the carbonation out and save you having to try and shake it without disturbing the sediment. :thumb:
