just wondering is it time yet to think about a Christmas brew
as it is only about 8 months till Christmas
are you thinking about the brew for Christmas day
if so what
 
I'm going to do an IPA with piney hops (I'm too chicken to do a proper pine/spruce beer) and maybe a little orange peel.

Haven't decided which hops (would simcoe, chinook and styrian holdings go together?) or how it'll work yet though!

Try using the Belgian yeast from crossmyloof as it gives a spicy note to it.

- Maple bourbon porter* has already had 2 months in the bottle.

- Brewferm triple is coming up on 3 weeks in the bottle.

My issue is I have another week or two of waiting for beer I can drink NOW (well in 12ish hrs time)

*Based in the GH vanilla bourbon stout as mentioned in my brewday thread, monthly reviews on my brewtube vids.

Planning a couple of single hop pale ales (maybe for hoppy christmas drinking) to see exactly what summit and cascade bring individually (always seem to pair them either together or with something else).
 
Few options for me I still have a dozen of my fruitcake barelywine from last Christmas. Tempted by a more standard English barleywine or a Scottish wee heavy, but a Belgian triple could be a nice alternative or maybe do both for a contrast?
 
It's always beer time!

I assume you are in the Northern Hemisphere, and I personally prefer heavy rich beers in winter, which are better with good long conditioning.
 
absolutely! get your brewfferm abdij and xmas on now to avoid disappointment! for dark beers 2-3 months+ depending on recipe and how you like your beer. I have 48 bottles of strong dark beer that will be over 1 yr old by xmas. I brew a 'young' dark beer September time they'll be rich and sweet at xmas time. after 5-6 months more they turn liqouricy - which i don't like so I leave those for another 6 months plus where they'll become powerful and complex. So I always have a mixture of the two types. Plus I do a hoppy beer October/November time for when I want something a bit lighter during the festive season.
