ok i am 7 days into my first brew,i have just transfered into my pressure barrel,the beer smells like beer and it tastes ok considering it has not had time to condition,i have added a shot of co2,the barrel seemed to leak a little gas at first but all seems fine now.it says on the instructions to leave it in a warm place for 2 days then into a cool place,can i leave it longer without affecting the quality or should i get it in the cool asap?also how long till i can drink it(my thinking being the quicker it is drunk the quicker i can start me next brew.

Hi Mike

You can leave it at room temp for 10 - 14 days to get the secondary fermentation you want for carbonation and to bring the beer into condition.

Then transfer to the cold to let the yeast clear down. I'd give it 14 days in the cold and then try it.

A daily squirt just to check wont hurt though *snigger
 
You need to take a hydrometer reading before and after fermentation then use our calculators at the top of the page :thumb:
