Having looked at these beore, even the Aquarium folk recommend using a separate controller instead of the built in thermostat. Something about boiled fish I seem to remember...
 
Can do that but any reason other than for cleaning?
Was thinking to test the thermostat in water then if it proved okay I.e.20 to 22 I'd just put it in. Main issue any other way is room but sure I could stick fv in a rough tub in the shed if needs be.

Standing the fv in a water bath that's heated by the aquarium heater means no localised heat spots in the fv, ie, the heat is transferred to the fv in a more gentle manner. That way the yeast don't get a sudden temperature shock. Lots of folk do it the water bath way to avoid cleaning 'issues' as you've alluded to ;)
