Have been quiet for a while, beavering away in the basement, but today got the last labels on a cascade rich IPA. Will be putting the feet up for the rest of the year with the new years resolution firmly set on buying some AG kit.

I have 4 extract based brews here.

CHRISTMAS ALE: I thought I'd go a bit wheaty using brewferm blanche yeast, it's pretty dark and hit 6.8% ABV. I am seriously happy with the result.
370g caracrystal
1.5kg light malt extract
1.5kg wheat malt extract
1kg amber malt extract
340g dry malt extract
20g homegrown coriander seeds
2 cloves,
1tsp cinnamon powder
1tsp 5 spice
45g grapefruit peel
142g honey

45g Saaz

ANTZ IN YER PANTZ:Light and Amber malt extracts with a smidge of dry wheat extract. Nice colour. 5.6%ABV
EKG and Fuggles used for both bittering and aroma
95g EKG pellets thrown in for dry hopping
Safale US05

BITTER ANTZ: Light and amber malts with 250g CaraCrystal 120 4.2%ABV
EKG used for bittering and EKG/Fuggles used for aroma.
Safale US05

ANTZ CASCADE: Just Light malt extract and a bit of caracrystal in this one. 4.6%ABV
Cascade used for bittering, aroma and dryhopping. Will be cascade-tastic
Safale US05
This one will be interesting as I used the local water from a fountain. Tasted ok and is from a natural spring, so fingers crossed.

Thanks guys for all your hints and tips in getting me up and running with my new hobby this year.
