Hi,
I found out about this forum from Shaun and Easy Home Brew in Ashford, Kent. We had a good chat yesterday at the shop. One of the subjects was a favourite beer of mine Dark Star Hop Head. I am trying to get a home brew with the same taste. I got close using Citra hops, but found out the brewer actually uses two other hops. I now need to find out what ratio these are used and also if one or both of these are used for dry hoping.
About me. I originally brewed over 20 years ago in a big way. First with kits, then malt extract and finally full grain mashing. I almost bought a home brew shop, but as home brewing went off the boil (no pun intended!) for years, maybe that might have been a bad thing. I had a break for about 2 decades, then a couple of years ago a guy at work decide to set up a home brewing club. I decided to join and resumed brewing. Each time we brew we swap bottles of beer, although I prefer draught. The other members only use kits, which I have to say are very good these days.
At the moment I am using a mixture of malt extracts, grains and of course hops. I use recipes from David Lines book Brewing Beers Like Those You Buy (a classic!), but recently have been more adventurous by trying hops other than Goldings and Fuggles. Thanks to Easy Home Brew I discovered the wonderful Citra hop, which I think has produced my best ever bitter. My favourite dark beer is David Line's recipe for Theakstons Old Peculiar, which was commended by all in our brew club.
I am a big fan of real ale and I think Kent has some great micro breweries (Gadds/Wantsum) and recently the number of micro pubs has been on the increase. These are very small pubs, with reduced licencing hours, serving local micro brews, Perry's and traditional ciders (no lager!), no juke boxes, Sky Sports, just conversation for entertainment and limited food like cheeses and pork pies. The original concept came from Martyn at the Butchers Arms in Herne, but now we have 3 others in Ramsgate, Westgate On Sea and Margate. The latter has not grasped from Martyn the true concept and in fact I don't think should be in the catagory of Micro Pub.
BTW my fictitious brewery is Old Rectory Ales, hence my user name on this forum. My name is actually Steve. I always make labels for my home brews and do ones to commemorate things like family and friendsâ milestone birthdays, anniversaries etc.
