If u only had one malt to use what would it be for all the pale ale and ipa heads

If push came to shove, I think I'd be perfectly happy with Crisp's Best Pale Ale Malt, or even Hook Head. Even more so if you're only talking about base malt.

Seconded on this - mind you not that I have a great deal of experience but it is what I've been using over the last year.

Keeping it simple

Hook Head pale malt or pilsner malt. I rarely use anything else these days. Ok, I do use amber as well but I make my own by cooking the Hook Head pale. What with that and different mash temperatures you can do quite a lot.

My default is to use crisp pale or extra pale malt. Mainly because that’s what GEB sell, but I’ve been perfectly happy with it.
