I'm trying to identify a flavour that I love in a few ipa's, modus Hoperandi, goose island IPA, languanitas all have this flavour. I thought it was like fresh grain and that's why I liked it so much. My last brew was a modus clone and whilst not the same by a long shot I did feel it was sort of to style, but still missing that flavour I'm after. Has anybody any ideas? Maybe somebody has sampled all three of the beers mentioned and knows what I'm after?.... I'm actually now wondering whether it is Columbus hops or, is it that these beers manage to exact a lot more flavour from the hops and it's just so much more intense - a lot of my hoppy beers come out very 'flowery' nice but not what I'm after - I'm talking about when I use cascade and williamette hope specifically here. I have tried adding a couple of teaspoons of burton salts o be last couple of brews as my Scottish water is very pure, I think this pure water is also to blame!
