I got it wrong again dad, temperature of brew, how important?

Wilko white wine kit, wife has worked out how to brew it, shame me into doing it, so temperature too high for a beer brew, want 19 to 20 degs C, but wine said 20 - 25 degs, so that seemed OK, however it started to raise reached 27 degs and I decided must do some thing, so dish cloths over the demijohn sitting in a paint roller tray sensor strapped to side, and a desk fan connected to the thermostat.

OK temperature has dropped, and it has stopped forcing foam out of the air lock, set thermostat to 22 degs C and it is not turning off. but do I need to worry? What is the result if wine goes over temp? With beer a bad after taste, but what happens with wine?

it will be OK especially as you have already taken action to control the heat

however it started to raise reached 27 degs

When my FV is on the heat pad in winter it has got up to 28c and settles around 26c i have never had a bad batch so i wouldn't worry.

Thank you, glad I have not spoilt it. Cooled down a bit now, but still to hot to start a beer brew off.

That's one of the reasons I make wine and not beer.
