New to this just trying to make my first turbo cider.
Iv just finished adding the yeast and leaving it to ferment.
However when I took the hydrometer reading there was still sugar at the bottom of the Demijohn does this mean that the cider will actually be a higher reading than what I had?
 
Yes.
If its only just started you either try to get the sugar to dissolve in some way then take another reading if that's important for you, or you ignore it and just allow the yeast to get on with its thing.
But the really important reading is the one at the end which tells you if its finished (or not)

if I want to take a test to insure it’s at compete what’s the best way to take it out my 5ltr demi to get it into the container in which I test in?
 
You could use a sanitised turkey baster to suck out some of your cider. It is not advisable to return the sample to the DJ.
I don't use DJs so other members who do might have a better idea, particularly winemakers (@Chippy_Tea ?).

As Terry suggested a turkey baster will do the job, i didn't have one when i used to use my hydrometer so i used to just pour it straight from the DJ into the test container using a funnel (if you are going to test regularly i would get a baster)
