Hey,

So I started my 2nd ever brew about 4 weeks ago. Went for the Coopers Ginger Beer kit but decided to use 2kg sugar to boost the strength a bit.
Now the problems started, all seemed well temperature looking good and fermentation seemed ok nice layer of bubbles on the top.

Started with a hydrometer reading of 1046
2 weeks later - Hydrometer showing at 1011 so looking good.
3 weeks later - Hydrometer showing at 1001
4 weeks later - Yesterday showing at 999 today showing as 997

Today though bubbles are going from the top so it does look as though it is coming to an end. Taste wise it isn't too bad.
At the moment I am trying to resist bottling it but at 4 weeks old I am getting worried its going to be ruined. Is the length of time related to a sugar overload I did or? and should I be worried about the hydrometer showing below 1000?

Wine can get close to 0.990 - the lower the reading, the drier it is. Sugar will have dried it out a treat.

Take another reading tomorrow and if you hit 997 you should be good to go.

no 4 weeks is ok wouldnt worry about it ,just finished my last bottle of this tonight, was really good and will brew it again soon.
