Last month I kegged a Woodfordes Wherry and two weeks ago a W Nog (both in 40 pint Youngs plastic barrels). Both have been measured to be approx 4.4ABV after 0.2% added for secondary ferment (100g sugar in 40 pints). I would like a 5.5-6.0% real ale. Is there a simple way to do this without ruining flavour?

Hi Richy.

I'm a newbie to homebrew and have just recently bottled a Woodforde's Wherry. My simple method of increasing the % vol was to only brew 19 litres instead of the standard 23 litres.

This simple increase in concentration strength should increase your alcohol %.

Hope this helps.

+1 for brewing short but you will also need to add more fermentables as well. If you use sugar then you will dilute the flavour in the final beer and reduce the body. You could use DME or LME to up the ABV. This will produce a malter beer with more body.

There are a few kits that go to thoughs ABVs but they due require a longer maturing time. Have a look at the brewferm kits

Thanks to all! I shall brew the next batch as advised and hopefully that'll do it.
Might also run a batch with added malt extract as suggested.
I'm going to try my first Nog tonight so might just post a verdict too
